Have you heard, or witnessed how we used to cook in our grandma and great-grandma generation?
Why Am I sexist, I could say in our grand-pa and great grand-pa generation.
Man also like to cook! Some of them.
In my father family, men were and are always cooking.
In my mom’s family it is woman only! Until she met my father, who took over the stove!
I m both side grand-daughter, great-grand-daughter and daughter, and I love Cooking….
I cook like in the old days, With approximative proportions, and my 5 senses.
I also know how to follow a proper recipe but I find it usually less fun….very important under certain circumstances like : when you really can’tmess up your cooking and can’t order at the last minute to save the day!
So how to make Pate d Amande ( Almond paste):
Take some almond boil them, until they become tender and the brown envelopes starts detaching itself!
Then remove them from the boiling water and as soon as you can peel off the brown skin.
Once they are all cream color and shinny…
Use your mixer to reduce them to powder! ( for the lazy one buy almond powder premade… But won t taste as good).
Mix an egg yolk, or 2 depending on the amount of almond you used! You ll see what you need as it needs to form a paste… Should not be liquid!
Add some sugar powder… Also depending on your taste but enough to keep the mix well binded !
Add some orange blossom flower water ! The delicious taste needed in any North African desert!
Then make little balls place them nicely on a plate
Cover and place in the fridge for at least one hour so they become firm !
Then it s time to eat… Serve them and enjoy…
You can also open dates and insert the almond paste ball in it… Or put 2 nuts around the almond paste ball… Serve with tea or coffee or just as a dessert…

All you need is :
Orange blossom water
Eggs ( in fact just the yolk)
Additional any dry fruits ( better with dates or nutts).

1/ Maison Harlem
French ambiance, with a warm touch that completly Harlem, NY, USA’s style! This restaurant could be in the center of Paris, I would see it in Chatelet les Halles, as it could be in Lyon or Bordeaux, but it is for our luck in NYC!
Food is delicious, mainly French with a North African touch (a delicious couscous and the best Mergues).
The product used are carefully selected from local producer. I did give up, eating meat in many places in The USA, but in MAISON Harlem I do not think twice, and enjoy myself.
Next on my to try list: the half rosted chicken, Miam Miam yummy.
And my unconditional love : their ratatouille.

This one is a corner stone of Harlem! Amazing drinks! Earthy southern American food and live music you would not want to miss!
Ambiance !!!! A real Atmosphère! People are alive ! Sensual and want to enjoy life ! You feel it all around you! It s a real pleasure to be there !
Tip: no reservations during WE arrive early and enjoy a drink by the bar.

New York could be a definition of the “fast” I ld like to describe.
New York is full, fast, new, engaging, opportune, young, never ending, sleepless…
When your away, 2 days seems like a week… You miss it… New York has grown into you… You are making One… But it s too much…it s oversize… But you like it … It feels right…les vitesses sont Enclenchees! ( the gears are looked ).
You become yourself, while losing sight of where your going, slow down and think ( almost impossible). Necessary : you break, adjust the speed… Look around realize … Full speed again … It s exhilarating… You are alive !

Last week I saw a moving documentary on children saved by SACH… And I wished I could do more… It was about children in Tanzanie and miracles! generosity and passion of 2 doctors and the love of parents for their sick child! The strength of community! It was about beleifs ! Faith in God ! Any God! They all had a different name for God but believed in the same strengh! LOVE LIFE HOPE COMMITMENTS !
How the effort of men can change life for One and for all.
Some years ago a girl from Ethiopia with a congenital heart disease was saved by SACH she is now in the USA completing her studies to become medical doctor and go back to Etiopia to help healing her people!

Yesterday We met these bikers in Central Park ! They had just completed 556 miles in a day from Quebec to NYC ! Free spirit! Great smile ! Love to meet people that follow their dreams!
