Some tips on my top french restaurants:

1/Maison Harlem, love the food the ambiance the wine, it’s just like being in Chaletet les Halles in Paris or la butte Montmartre. Their ratatouille is amazing and there merguez home made, duck, tarte flambée…

2/La tarte Flambé highly recommended, to be tried asap

3/ If I want French or Swiss Raclette, I ll go to http://raclette.nyc ( Lower East Side)

4/Orsay for everything

5/ Demarchelier for the cheese fondue

Just click on the  Map… bon appetit

Do you some time recall And dream of past flavors, a taste, a dish, a meal, And more…

Since I Have tried Julian Medina’s tacos ceviche, And more, I can’t stop thinking about the next occasion to Have one more.

Each bite Is so refined and balanced, it s never too much, and still not too little.

I have to confess that you have to hold yourself from ordering again and again.

Wether it s fish, meat or sea food, the herbs or veggies employed brings the acidity or peps or softness needed, and the sauce brings the spice and smoothness balancing the crunch … It s an explosion of savors! Une explosion de saveurs en bouche!

Always a good ambiance and happy mood.

Luckily they opened in different parts of town, I have not tried all locations but might end up trying them all to find more excuses to eat this delicious cuisine …

I have rarely found food to dream about… Toloache is as good as beautiful and in a great ambiance.

A must go if you pass by NYC…

On these words wishing you a good night or good day..

Press here to get access to their website and location http://toloachenyc.com/mobile/home.html

I have to admit I was so busy eating I did not even think about taking a picture before enjoying my order… I ll use some of the pictures posted on Julian Medina’s page to give you an idea.. Vous mettre d eau à la Bouche !

(Once again : pictures not taken by me…)

P.S. A great place to go in larger group it s very convivial … But perfect alone you will never be alone while enjoying such delicious food, two for a date or any number …the point is not to miss an occasion 🙃
And as a bonus check Julian s Medina Facebook page for his guacamole recipe.

A bientôt

Wishing You a Great Sunday !

Have you heard, or witnessed how we used to cook in our grandma and great-grandma generation?

Why Am I sexist, I could say in our grand-pa and great grand-pa generation.

Man also like to cook! Some of them.

In my father family,  men were and are always cooking.

In my mom’s family it is woman only! Until she met my father, who took over the stove!

I m both side grand-daughter, great-grand-daughter and daughter, and I love Cooking….

I cook like in the old days, With approximative proportions, and my 5 senses.

I also know how to follow a proper recipe but I find it usually less fun….very important under certain circumstances like : when you really can’tmess up your cooking and can’t order at the last minute to save the day!

So how to make Pate d Amande ( Almond paste):

Take some almond boil them, until they become tender and the brown envelopes starts detaching itself!

Then remove them from the boiling water and as soon as you can peel off the brown skin.

Once they are all cream color and shinny…

Use your mixer to reduce them to powder! ( for the lazy one buy almond powder premade… But won t taste as good).

Mix an egg  yolk, or 2 depending on the amount of almond you used! You ll see what you need as it needs to form a paste… Should not be liquid!

Add some sugar powder… Also depending on your taste but enough to keep the mix well binded !

Add some orange blossom flower water ! The delicious taste  needed in any North African desert!

Then make little balls place them nicely on a plate

Cover and place in the fridge for at least one hour so they become firm !

Then it s time to eat… Serve them and enjoy…

You can also open dates and insert the almond paste ball in it… Or put 2 nuts around the almond paste ball… Serve with tea or coffee or just as a dessert…

Can t believe I started writing  that post more than 500 days ago…

Kisses to all…

Miss my Grand-maman… So looking forward to these pates d Amande… I ll make some tomorrow with my kids. Send me your pixs if you try at home! Do not be affraid using my old fashion direction you can t miss.

All you need is :

Almonds

Sugar

 Orange blossom water

Eggs ( in fact just the yolk)

Additional any dry fruits ( better with dates or nutts).

A mixer and a fridge

1/ Maison Harlem

French ambiance, with a warm touch that completly Harlem, NY, USA’s style! This restaurant could be in the center of Paris, I would see it in Chatelet les Halles, as it could be in Lyon or Bordeaux, but it is for our luck in NYC!

Food is delicious, mainly French with a North African touch (a delicious couscous and the best Mergues).

The product used are carefully selected from local producer. I did give up, eating meat in many places in The USA, but in MAISON Harlem I do not think twice, and enjoy myself.

Next on my to try list: the half rosted chicken, Miam Miam  yummy.

And my unconditional love : their ratatouille.

Ambiance !!!! A real Atmosphère! People are alive ! Sensual and want to enjoy life ! You feel it all around you! It s a real pleasure to be there !
